Lemon Pepper Tilapia

Easy prep meets an elevated dinner idea for you and your family with this simple tilapia recipe. Fillets are wonderfully seasoned with our organic Lemon Pepper with Lemon Peel and topped with a saucy mixture of artichoke hearts and Kalamata olives. Bright, tangy and oh so good!

Ingredients
- 4 tablespoons butter or vegan alternative, melted
- 1 tablespoon Frontier Co-op® Organic Lemon Pepper with Lemon Peel
- 1/4 cup mayonnaise or vegan alternative
- 2 tablespoons lemon juice
- 1 can (14 ounces) quartered artichoke hearts, drained
- 1/4 cup sliced Kalamata olives
- 4 tilapia fillets
Directions
- In a medium bowl, combine melted butter, lemon pepper seasoning, mayonnaise and lemon juice. Add artichokes and kalamata olives, and toss to coat.
- Preheat oven to 350 degrees and lay out 4 sheets of foil.
- Place one tilapia fillet on each foil sheet, and top with one-fourth of the artichoke and olive mixture. Fold up foil to enclose tilapia and sauce.
- Bake tilapia pouches for 20 minutes. Open pouches carefully, plate and serve.
- Any remaining sauce can be scooped up and placed on top of the fillets for extra flavor.
- For a crust baked on the top, open the pouch, add some panko breadcrumbs, leave the fish exposed to the oven, and bake until the crumbs crisp up.
