In a saucepan, mix packet contents with 1/4 cup olive oil and 1/2 cup water, stirring until completely dissolved. Cook over medium-high heat, stirring constantly.
Once pesto comes to a boil, immediately remove from heat.
Add pesto to freshly prepared pasta (8 ounces dry). Stir in 1/3 cup grated Parmesan cheese.
Suggested Uses
For a creamy pesto, add 4 oz. Neufchatel cheese.
Use as a sauce for pizza.
Mix 1/2 cup olive oil and 1/4 cup vinegar to make a pesto dressing for a tomato salad.
For a vegan version, omit Parmesan cheese and add 1/4 cup of your favorite nut butter.
For Basil Pesto Bruschetta: Lightly butter French bread slices. Broil until lightly golden. Top with thinly sliced tomatoes & cheese; sprinkle packet contents on top. Broil 3-5 minutes more.
