The Spanish word enchilar, meaning "to add chili," is the base of the word enchilada. While a dish similar to enchiladas was mentioned in the 1500s by Bernal Diaz del Castillo, a Spanish conquistador, meals similar to this were likely part of Mayan culture far longer fish wrapped in corn tortillas, among other varieties. This famous dish has evolved to include mole and enchiladas rojas or verdes.

Water, Organic Tomatoes, Sea Salt, Organic Ancho Chili Pepper, Organic Garlic, Organic Cocoa Powder, Organic Cane Sugar, Organic Lime Juice Concentrate, Organic Smoked Paprika, Organic Chipotle Pepper, Organic Cumin, Organic Canola Oil, Organic Cayenne Pepper, Organic Black Pepper.
Directions
- Preheat oven to 400 degrees. Lightly grease a 3-quart baking dish.
- Wrap 8 tortillas in a sheet of foil and warm in oven for 5 minutes.
- Remove tortillas; place 2 Tbsp. shredded Monterey Jack or cheddar cheese into each tortilla; roll and place seam-side down in baking dish.
- Cover with Simmer Sauce and sprinkle with additional cheese, if desired.
- Cover dish with foil and bake for 12 minutes, or until heated through. Remove foil; bake 5 minutes more. Serve with your favorite toppings.
Suggested Uses
- For Nachos: Toss 1 lb. cooked ground beef with Simmer Sauce.
- For Queso: Combine ¼ cup heavy cream, 8 oz. shredded cheese, and Simmer Sauce.
