Teriyaki Salmon and Vegetable Udon

Ingredients
- 8 ounces udon noodles
- 2 tablespoons sesame oil
- 1 pound salmon, cut into 1-inch cubes
- 3 cups broccoli florets
- 2 cups thinly sliced bok choy
- 1½ cups cooked, shelled edamame
- 1 packet Simply Organic® Teriyaki Marinade Mix
- 1/4 cup neutral oil
- 1/4 cup water
Directions
- Cook udon noodles according to package directions (about 8 to 10 minutes, if dried), then drain and set aside.
- Meanwhile, in a large skillet, heat oil over medium-high heat.
- Add salmon cubes and sear until browned on all sides and cooked through, about 6 to 8 minutes total. Remove from skillet with a slotted spoon and set aside.
- Add broccoli and cook for 1 to 2 minutes, then add bok choy and edamame, and cook for 5 more minutes, stirring occasionally.
- Meanwhile, whisk together Teriyaki Marinade Mix, oil and water.
- Add cooked noodles and teriyaki sauce to vegetables and toss to combine. Add salmon and toss gently before serving.
