Ingredients

  • 8 ounces udon noodles
  • 2 tablespoons sesame oil
  • 1 pound salmon, cut into 1-inch cubes
  • 3 cups broccoli florets
  • 2 cups thinly sliced bok choy
  • 1½ cups cooked, shelled edamame
  • 1 packet Simply Organic® Teriyaki Marinade Mix
  • 1/4 cup neutral oil
  • 1/4 cup water

Directions

  1. Cook udon noodles according to package directions (about 8 to 10 minutes, if dried), then drain and set aside.
  2. Meanwhile, in a large skillet, heat oil over medium-high heat.
  3. Add salmon cubes and sear until browned on all sides and cooked through, about 6 to 8 minutes total. Remove from skillet with a slotted spoon and set aside.
  4. Add broccoli and cook for 1 to 2 minutes, then add bok choy and edamame, and cook for 5 more minutes, stirring occasionally.
  5. Meanwhile, whisk together Teriyaki Marinade Mix, oil and water.
  6. Add cooked noodles and teriyaki sauce to vegetables and toss to combine. Add salmon and toss gently before serving.
