Spiced Honey Roasted Carrots

Sweet, spiced, crispy — these roasted carrots have it all! They’re the quintessential (and easy!) holiday side dish, ready in less than 45 minutes and always a crowd favorite. Serve them plain, or garnish with fresh cilantro, pomegranate and feta.

Ingredients
- 2 pounds carrots, peeled and cut into 3-inch pieces
- 3 tablespoons olive oil
- 1/4 cup honey
- 1/2 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
- 1 teaspoon sea or Himalayan pink salt
- 1/4 teaspoon Simply Organic® Cinnamon
- 3/4 teaspoon Simply Organic® Garlic Powder
- 1/2 teaspoon Simply Organic® Onion Powder
- 1/2 teaspoon Simply Organic® Cumin
- 1/2 teaspoon Simply Organic® Coriander
- 1/4 teaspoon Simply Organic® Black Pepper
- For garnish: 2 tablespoons finely chopped cilantro, 3 tablespoons pomegranate seeds, 2 tablespoons feta cheese (optional)
Directions
- Preheat oven to 400 degrees.
- In a medium bowl, place cut carrots.
- In a small bowl, whisk together olive oil, honey, vanilla, salt, cinnamon, garlic powder, onion powder, cumin, coriander and black pepper.
- Pour over carrots; toss well to coat. Transfer carrots to a sheet pan.
- Roast for 30 minutes, stirring about every 10 minutes, until carrots are golden brown and fork-tender. (It may take longer, depending on the thickness of your carrots.)
- Serve warm with cilantro, pomegranate seeds and (optional) feta.
