Ingredients
- 1 pound Brussels sprouts
- 1 cup cranberries
- For the Marinade:
- 3 tablespoons maple syrup
- 2 tablespoons cranberry juice
- 2 tablespoons orange juice
- 1 teaspoon extra virgin olive oil
- 1/2 teaspoon Frontier Co-op® Organic Ceylon Cinnamon
- 1/2 teaspoon Frontier Co-op® Sea Salt
- Zest from 1 orange
Directions
- Prepare Brussels sprouts by cutting stems off and slicing in half. In a bowl, combine Brussels sprouts and cranberries.
- In a separate bowl, whisk together maple syrup, cranberry juice, orange juice, olive oil, cinnamon, sea salt and orange zest. Pour over Brussels sprout mixture and toss until coated. Cover and let marinate for 1 to 2 hours.
- While Brussels sprouts marinate, preheat oven to 425 degrees.
- Spread Brussels sprouts in a single layer in a roasting pan. Pour any remaining marinade over sprouts and cranberries.
- Roast for 30 to 35 minutes until Brussels sprouts are tender and slightly charred. Serve warm.
