Ingredients

  • 4 boneless, skinless chicken thighs
  • 2 tablespoons butter
  • 1 cup chicken broth
  • 1 teaspoon lemon juice
  • 1 tablespoon Simply Organic® Everything Dill Blend
  • 2 tablespoons Dijon mustard
  • 1 teaspoon agave syrup
  • 1 tablespoon cornstarch
  • 1 tablespoon water

Directions

  1. On your instant pot, activate the sauté feature; add butter to pot until melted.
  2. Place chicken thighs in pot and brown on both sides.
  3. Add chicken broth, lemon juice, everything dill blend, Dijon mustard, and agave to the instant pot.
  4. Activate pressure cook for 8 minutes.
  5. Allow to vent; remove chicken from pot.
  6. Activate sauté feature on the instant pot.
  7. In a small dish, mix cornstarch and water until cornstarch is dissolved. Slowly whisk into mixture in instant pot.
  8. Cook sauce until thickened and emulsified.
 
RECIPE TIPS
  1. This dish is great served over rice to enjoy any extra sauce.
  2. To make with chicken breasts or skin-on thighs, cook until chicken reaches an internal temperature of 165 degrees.
