If you’re looking for an easy, two-bite holiday appetizer, look no further than these Cranberry Brie Bites! Puff pastry is filled with creamy, melty brie, homemade spiced cranberry compote, and topped with crunchy pecans and fresh thyme.

Ingredients
- 2 cups fresh or frozen cranberries
- 3/4 teaspoon Simply Organic® Cinnamon
- 1/2 teaspoon Simply Organic® Ginger
- 1/4 teaspoon Simply Organic® Nutmeg
- 1 teaspoon Simply Organic® Pure Madagascar Vanilla Extract
- 1/4 cup honey (or other sweetener of choice)
- 1 sheet (8 ounces) puff pastry, thawed
- 6 ounces brie cheese, sliced into small squares
- 1/4 cup finely chopped pecans
- Optional for garnish: 1 tablespoon fresh thyme, finely chopped, and honey
Directions
- Preheat oven to 375 degrees and lightly grease a 24-count mini muffin tin.
- Into a saucepan over medium heat, add cranberries, cinnamon, ginger, nutmeg, vanilla extract and honey. Bring to a simmer, stirring often, until cranberries start to pop. Reduce heat to low and cook down into a thick mixture (about 15 minutes). Let cool slightly.
- Meanwhile, cut puff pastry into 24 small squares or rectangles. Place one in each muffin cup. Place a square of brie in the center, then spoon about 2 teaspoons of cranberry compote on top. Top each with a sprinkle of chopped pecans.
- Bake for 12 to 15 minutes, until puff pastry is golden brown. Remove from oven and let cool slightly before removing from tins. Garnish each with thyme and a drizzle of honey, if desired.
