Ingredients

  • 2 pounds potatoes, peeled and sliced 1/8-inch thick
  • 1/4 cup butter
  • 1/4 cup (use tapioca flour, sweet rice flour or Frontier Co-op® Cornstarch for a gluten-free version)
  • 5 cups milk
  • 4 tablespoons Frontier Co-op® Organic Canadian Steak Seasoning
  • 3 cups shredded cheddar cheese
  • 1 1/2 cups shredded Gruyere or Swiss cheese

Directions

  1. In medium saucepan, melt butter and whisk in flour. Bring to a simmer and cook for 3 to 4 minutes.
  2. In medium saucepan, melt butter and whisk in flour. Bring to a simmer and cook for 3 to 4 minutes.
  3. Remove from heat, add cheeses, and allow cheeses to melt. Return to heat if needed to melt cheese.
  4. Preheat oven to 350 degrees. In a 9-x-9-inch baking dish, place 2 layers of sliced potatoes, then pour 1/3 of cheese sauce over potatoes. Repeat this layering 2 more times.
  5. Cover dish and bake for 1 hour. Remove cover and bake for an additional 20 minutes.

NOTES
  1. We suggest using large russet potatoes, but other potatoes can be used as well.
  2. When cooking the butter and flour, it should smell faintly like burnt popcorn, which is the point that it is ready.
